Elixir Espresso and Wine Bar Opens Largest Location at Westfield North County

Celebrate the grand opening of Elixir Espresso and Wine Bar, at Westfield North County  on Monday, April 14th from 6pm-8pm. The celebration will feature live music, champagne, wine and small bites- as well as an official ribbon cutting.


This is the third and largest location of San Diego cult favorite Elixir Espresso Bar (the first location is located in the historic Marston building in Downtown) and is very unique in that it is technically considered a kiosk, but 33 year-old owner Neven Palazov has unexpectedly made it into something so much more (see images below). More about Elixir and the Palazov family:
In 1999, a then 18-year-old Palazov and his family immigrated from Bulgaria to San Diego. His passion for coffee began to develop when he frequented SDSU-area coffee shops to study while earning his Finance degree- but found they lacked the authenticity of a true European-style espresso bar. In 2007, at the ripe age of 26, Palazov realized his dream of owning his own espresso bar that offered expertly and authentically crafted espresso, served in a porcelain cup and enjoyed in a social atmosphere reminiscent of his homeland.The charming first Elixir Espresso Bar location on downtown’s C St. is the foundation of Palazov’s success.


The espresso bar is housed in the 130+ year-old historic Marston building and serves coffee beverages and crepes made in-house from scratch with his mother’s recipe. Palazov’s commitment to quality and authenticity has led him to support other local, like-minded businesses- Elixir Espresso Bar serves local roaster Cafe Calabria, Bread & Cie pastries and Bottega Italian gelato. News of Palazov’s expertly pulled espressos and exceptionally brewed coffees spread quickly and the space became a lunchtime refuge for financial district employees. Customers became so fiercely loyal, traveling downtown on weekends for their coffee-fix, that Palazov took the opportunity to open a second Elixir Espresso Bar location at Westfield UTC, central to where many of his weekday customers resided.


He found the in-center location be a great fit for his offerings and Westfield saw Elixir Expresso Bar’s artisan coffee beverages as a unique benefit to shoppers. The two retailer’s operational philosophies, focused on quality and customer service, were so well-matched that after the success of the UTC location Palazov saw Westfield North County as an ideal location for his third Elixir space.Palazov is poised to transform customers’ shopping experience with the recent opening of Elixir Espresso & Wine Bar which is by definition a kiosk- but with the help and encouragement of Westfield has grown to be much more. The sprawling, contemporary-designed space is warm and inviting- a welcome respite for weary shoppers. The beloved Elixir Espresso Bar menu has grown to include a selection of unique regional wines with complementary cheese boards and European-style flatbreads made from scratch in-house.The business now employs a total of 20+ employees, with Palazov’s family members lending a hand with the growing operation when needed. It’s not uncommon to find Palazov’s mother baking baklava or chance upon his brother behind the espresso machine.


Palazov’s passion for quality, customer service and authenticity has been instrumental to his success and impressive growth- with three Elixir Espresso Bar locations opened in just six years. The unique in-center business model allows him to continue to attract new customers while his passion for the art of espresso keeps them coming back. In the short time Elixir Espresso & Wine Bar has been open it has built a steady, loyal following. Palazov hopes to continue to expand the Elixir Espresso & Wine Bar concept to other Westfield centers in the future.
